What do we think of this whisky?
This is a great whisky. For those that have recently got into whisky or enjoy Speyside or Irish whiskies, this is a fantastic segway to other whiskies. It has a nice light citrus aroma and has that familiar ‘oaky’ flavour you’d expect from ex-Bourbon casks. Like most Highland scotches, there is some spiciness. Even though it is not peated, there is a slight smokiness that give a hint of Skye or Islay scotches about it. It gives you a little bit of everything but perhaps isn’t as smooth or refined as older scotches.
The Highland Park 12 Year Old Viking Honour is usually reasonably priced and can be found in a lot of large supermarkets. It’s a great addition to any whisky collection and with ‘Viking Honour’ in the title, it has an aura of ‘don’t mess with me’ about it.
Should I add ice or water?
This whisky is not too strong flavour-wise so you may not want to dilute it. That being said, a little water may bring a little more balance to the scotch.

John Mayer is a phenomenal musician. His music is class to some and ‘fromage’ to others. He is a crowd pleaser and this is why we’ve paired him to the Highland Park 12 Year Old. This album gives enough popular music to entertain most but also provides enough to entertain those that are keen guitarists. ‘Neon’ is a great track but the album is great to have on in the background while you chill out at the end of a busy day.
